Decaf process — Mountain Water Our decaf is processed at Descamex, a specialist facility in Mexico using the Mountain Water Process. Green coffee is soaked in a pure water solution to gently draw out the caffeine, which is then filtered out while the flavor compounds are reintroduced to the beans. No chemicals. No shortcuts. Just clean, careful decaffeination that respects the integrity of the coffee.
